Rome's culinary traditions stretch back over two thousand years, with the area near the Tiber River serving as the birthplace of many iconic dishes. Roman cooks have long been masters at transforming humble ingredients into extraordinary creations.
Our signature Carciofi alla Giudia(Jewish-style artichokes) exemplifies this tradition—whole artichokes, twice-fried until crispy and golden, a technique perfected in the Roman Ghetto centuries ago. This dish, along with many others on our menu, showcases the ingenuity of a community that turned simple vegetables into culinary masterpieces.
